Although it's a dish that needs to be fried in oil, using an air fryer makes it much lighter and easier to prepare.
With less oil and a simple cooking process, it's a great method to use often at home.
Mat tang is known to be a dish that originated in China. Originally, it is characterized by coating the ingredients with sugar or syrup.
In China, there has long been a snack culture of coating not only sweet potatoes but also potatoes and fruits in sugar.
This cooking method came to Korea and established itself as 'sweet potato mat tang' with sweet potatoes as the main ingredient.
Especially in the 1970s and 80s, it became popular as a street snack and a menu item in snack bars, spreading widely in its sweet snack form as we know it today.
The ingredients are very simple. You just need sweet potatoes, a small amount of cooking oil, corn syrup, and sesame seeds for finishing.
About 2 to 3 medium-sized sweet potatoes are appropriate. It's best to use sweet potatoes of suitable size.
You can either peel the sweet potatoes or use them as they are. Leaving a bit of skin can enhance the texture.
Cut the sweet potatoes into bite-sized cubes and rinse them in water to remove the starch.
This process helps achieve a crispy texture. It's important to thoroughly remove moisture using paper towels or similar.

Place the sweet potatoes in a bowl and add about 1 tablespoon of cooking oil, mixing them evenly.
The key is to coat them thinly on the surface.
Preheat the air fryer to 180 degrees Celsius, then add the sweet potatoes and cook for about 15 minutes.
Flipping them once in the middle will help them cook more evenly.
After that, increase the temperature to 200 degrees and cook for an additional 5 to 10 minutes until the surface is golden and crispy.
In the final step, add corn syrup to a pan and gently heat it over low heat.
Be careful not to let the corn syrup boil too much, and when it's slightly warm, add the cooked sweet potatoes and mix quickly.
Once everything is shiny and coated, turn off the heat. Finally, sprinkle sesame seeds, and the sweet potato mat tang is complete.
The outside is crispy while the inside remains soft, and the sweet flavor blends well.
Since it uses little oil, it's less burdensome, and the cooking process is simple, making it a snack that anyone can easily make.

The preparation process is not difficult, and it's a snack that kids love and is also good for adults due to its high fiber content.
